Squeezed Chicken Rice Recipe
Nasi Ayam Penyet recipe, an Indonesian cuisine that is very popular and a favorite in Malaysia. It is a bit trivial to prepare this dish but it is well worth it as the result is very satisfying and very tasty. Ingredients:
- Ingredients for penyet chicken (stew):

- Ingredients for Crispy Flour:
- Excess marinade of chicken spices
- 1 egg
- 1/2 cup rice flour
- Ingredients for chicken rice:
- 3 cups rice, clean and toss
- 6 cups of chicken broth, or follow the dosage of the type of rice used
- 3 cloves garlic, tapped
- 1 cinnamon stick
- 2 flower buds
- 5 cardamom seeds
- 1 tablespoon butter or beef oil
- 1 pandan leaf, shred and knot

- 1 stalk of soup leaves

- 1 stalk of lemongrass

- Ingredients for sambal ayam penyet:
- 10 biji cili padi
- 10 red chilies
- 10 onions, cut into 4 pieces
- 3 cloves garlic, coarsely sliced
- 3 tomatoes, cut into 4 pieces
- 5 cm grilled belacan
- 1/2 handful of anchovies
- 3 tablespoons sugar, or to taste
- a cup of oil
- lime or musk lime
- a little salt, if necessary to taste
- Ingredients for side dishes:
- 4 tablespoons of tofu
- 2 pieces of tempeh
- Vegetables and salads (cucumbers, selom leaves, cabbage, long beans, tomatoes)
Preparation Method:
- Ways for penyet chicken (stew):
- Wash the chicken and boil with enough water along with ginger and garlic. Approximately 15 minutes or until soft.
- Lift the chicken and toss.
- Ways to season chicken marinade:
- Sangai spices marked (*). Sangai means to cook for a while on a non -greasy pan until it smells good.
- Cool the spices and grind together all the other ingredients until smooth.
- Mix the boiled chicken on top with the ground spices. Marinate for several hours. Minimum 2 hours so that the spices seep into the chicken.
- Fry the chicken until slightly crispy on the outside.
- Mix spices with tofu and tempeh before frying. But don't mix it with chicken.
- Excess spices will be used for crunchy flour
- Methods for crispy flour:
- Mix excess spices with rice flour and eggs. Sprinkle this mixture into the pan and fry until crispy.
- Can also be coated this mixture on marinated chicken before frying.
- Ways for penyet chicken rice:
- Heat the butter and sauté the garlic, cinnamon, star anise, cardamom and pandan until fragrant.
- Add the rice and stir for a while.
- Add water and a pinch of salt. Close the lid of the pot and cook as usual. Can also use an electric rice cooker.
- Methods for chicken soup:
- Heat chicken stock with bunjut soup and lemongrass. Che Nom did not put ginger and garlic because it was included during the first chicken stew process. Can also be rwbus with chicken bones such as neck and chicken legs (if you like).
- Bring to a boil and sprinkle with soup leaves, scallions and fried onions.
- Ways to make sambal ayam penyet:
- Fry the anchovies in oil until crisp. Lift and set aside.
- Fry the chilli and onion in the same oil.
- Then fry the tomatoes until wilted.
- Roughly grind anchovies, chillies, onions and fried tomatoes with grilled belacan.
- Heat the excess oil, cook the coarsely ground sambal with the Malacca sugar. Season with salt if necessary. Be careful because anchovies are already salty.
- Ways for by-products:
- Fry tempeh and tofu mixed with spices.
- Slice cucumbers and tomatoes, and clean other dishes. Serve with rice and penyet chicken.
